Brandy Final Step

I'm ten days late straining off the homemade brandy but "better late than never." Thanks so much to the commenter who suggested using a Brita! It worked wonderfully and was much less hassle and much less mess :) The juice strained off exceptionally clear and looks great.



I first dumped the whole works into a strainer and was left with just the juice.


Now pour the juice into the Brita and let it sit overnight in the fridge.


I'm doing one this morning in the Brita and here's one from yesterday in a two litre Mason jar.


The one from yesterday is a bit darker but as the juice is exposed to the air the other one will darken up a bit too. No more flipping!!

Oh I should add that I really had to restrain myself from licking my fingers this morning (it's a little early to indulge) because the taste test I had last night was heavenly! This has been, by far, the best I've made and I've done this recipe for a few years now :)

But how did it taste? That's the real thing, isn't it? I've run things through Brita before, just to see how good of a job it does ... and they come out really odd. Mint tea, for example, doesn't taste like mint any more!

It looks gorgeous.Im going to try this next year when we have a lot of fruit again.
What do you do with all the fruit afterwards? I imagine that would taste very interesting too:)

Hi Chris...I would normally give any kind of fruit to my chickens but in this case I thought that wasn't a great idea :) I actually threw the fruit out. I did taste one of the apricots, but while some are moist, others are quite dried out.

Now I have been through the Brandy recipe pages. How awesome. My family has made Rumtopft don't know if this is the right spelling) which is from Germany, I think. You used a variety of fruit or berries in summer, layered in small jars, and add sugar and rum, then let sit until Christmas. You then serve it fruit and liquid, spooned over cake, and or ice cream. It is very good as well. I may have to make some of each, brandy and rumtopft next summer.

I just started my first batch of apricot brandy and I'm a little concerned. The jar is bulging from internal pressure. Is this normal or should I dump it?

Hi Anonymous,
I would be a concerned. Are you using a glass jar? Do you mean the lid is bulging or the container? When I do mine the metal lid does get quite hard. If you think it has too much pressure open the lid and let some of it off, then put the lid back on and keep an eye on it for the next few days. Let me know what happens.

Hi Kansas,
I should have said the lid was bulging. I used a 1-gal pickle jar (well washed). After the first day the lid was bulging and when I cracked it opened the apricot liquid bubbled up like when you open a soft drink. This happened again the next 24-hours. It seems to be settling down now on day four.
