Peanut Brittle in the microwave?

Yes it works, it really does and it tastes delicious! The other day my sister was telling me about this but I forgot to get the recipe from her. So today I was surfing around and found this. Granted I have never made peanut brittle the "old fashioned way" but my sister tells me that she will never stand in front of her stove stirring forever, using her cast iron frying pan, again. The only thing I did differently was spray the cookie sheet with Pam and use a rolling pin once I had it on the cookie sheet, it helped flatten it out a bit more. This takes about 15 minutes from start to finish not including cooling time. You can substitute any nut for the peanuts, even sunflower seeds.

Put into little cellophane packages it will be a great addition to my Christmas baskets :)

You're officially now NOT HELPING me in the battle to not scarf down everything sweet in the kitchen... Knowing I can make almond brittle so easily, IN THE MICROWAVE is knowledge that I will now try shoving back under the couch...

Ooh, can you imagine how good it would be with a little spiciness?

O-o-o-o! This is the recipe that came with my parents first microwave oven, and it IS the best candy quickie. No candy thermometer. No checking what "stage" it is in. Perfect for anyone living at high altitudes. I've been known to purchase used cookbooks in search of this recipe. Thank you, Kansas, for getting this little gem out there!

Thanks for sharing this. I make all my candy recipes in an electric fry pan or microwave and have even converted some conventional recipes to work in one or the other. I have some of them on my blog under Taste of Tuesday which I started a couple months ago.
