Unbaked Chocolate Cookies, no oven required

After putting beef jerky in the dehydrator yesterday morning, I baked up 7 loaves of bread, baked Black Forest Streusel Bars, and then finished off with two batches of Unbaked Chocolate Cookies. I even managed to slip in supper! But that's it!... Hubby's going back to camp, because with this pace I'm going to keel over soon :) I'm trying to make up extra stuff so he can take it with him because he's not a cook, well not without a microwave anyway. Rumor has it he does dishes when away but it's something I've personally never seen, I figure the stars and planets have never quite lined up at home for that to happen. Today I'm posting the Unbaked Chocolate Cookies, tomorrow I'll post the Black Forest Streusel Bars. The cookies are simple to make and most people will already have everything in their pantry. I use skim milk and margarine in place of whole milk and butter and they turn out great. This recipe has been around for so long, with quite a few variations, I'll be surprised if there's anyone out there that hasn't heard of them before!
Unbaked Chocolate Cookies
2 cups sugar 6 tablespoons cocoa 1/2 cup butter or margarine 1/2 cup milk (skim is fine) Combine all ingredients in a pot and bring to a boil over medium-high heat, stirring constantly. Boil for a couple of minutes. Add: 1/2 teaspoon Vanilla extract Remove from heat. Add: 3 cups quick cooking oats 1 cup shredded coconut Mix well. Drop by spoonfuls onto waxed paper. Let sit until firm. Enjoy the chocolate rush!

Well, great minds think alike Kansas! I just looked up a recipe for these yesterday because I'm dying for some easy cookies. Mine calls for peanut butter, but they are basically the same. I bought some peanut butter today when I went to the store. So funny that you posted this.

Yup. We call these goo balls. For obvious reasons. The kids love them and I can't leave them alone.

How interesting -! Never even heard of these cooked cookies! I think I'd add coconut powder to mine and peanut butter to combine the two recipes... yum.

This was one of the first recipes that my kids made on their own when they were able to use stove top. It is such an easy one and such a quick sweet treat. Nice when you don't have corner stores so available for all those chocolate bars. Also when kids forget to tell you they need 30 homemade cookies for class just before school in the morning. :) I remember when! :) A nice reminder Kansas, I think I will make some today. Thank you.

I love those cookies. I always eat too many of them and the chocolate/sugar rush makes me a little ill. Doesn't stop me though.
